Classic Hungarian comfort food is a rich and savory beef stew seasoned with paprika and caraway seed and topped with fluffy dumplings.
1 tablespoon olive oil
1 medium onion, cut into thin wedges
1 clove garlic, minced
1/2 teaspoon McCormick Gourmet™ Caraway Seed , lightly crushed
2 cups Kitchen Basics® Original Beef Stock
1/4 cup tomato paste
2 tablespoons cider vinegar
1 1/2 pounds boneless beef chuck roast, trimmed and cut into 1-inch cubes
2 teaspoons McCormick Gourmet™ Paprika, Hot Hungarian
1 teaspoon McCormick Gourmet™ Sicilian Sea Salt
1/2 teaspoon McCormick Gourmet™ Thyme
1/4 teaspoon McCormick Gourmet™ Black Pepper, Coarse Ground
1 cup all-purpose baking mix, such as Bisquick®
6 tablespoons milk
1 tablespoon butter
Heat oil in 5-quart Dutch oven on medium heat. Add onion; cook and stir 3 minutes or until browned. Add garlic and caraway seed; cook and stir 1 minute or until fragrant. Add stock, tomato paste and vinegar, stirring to loosen browned bits in bottom of pan.
Stir in beef, paprika, sea salt, thyme and pepper. Bring to boil. Reduce heat to medium-low; cover and simmer 1 hour or until beef is tender, stirring occasionally. Skim fat as needed.
Mix baking mix, milk and butter in medium bowl, stirring to form a soft dough. Drop by heaping tablespoons over stew. Cover. Cook 15 minutes or until dumplings are cooked through.
