Herbed Chicken & Tomatoes

Just like it's done in a restaurant – chicken cutlets seasoned with Italian herbs in a chunky tomato sauce served over pasta.

  • Cook pasta as directed on package. Drain well. Meanwhile, mix seasonings in shallow dish. Reserve 2 teaspoons. Stir 2 tablespoons of the flour into remaining seasoning mixture in dish. Coat chicken in seasoned flour. Discard any remaining seasoned flour.

  • Heat 1 tablespoon of the oil in large nonstick skillet on medium heat. Add chicken in batches; cook 2 minutes per side or until golden brown and cooked through. Add additional 1 tablespoon oil as needed. Remove chicken from skillet; keep warm.

  • Heat remaining 1 tablespoon oil in skillet. Add onion; cook and stir 3 minutes or until softened. Stir in remaining 1 tablespoon flour. Add tomatoes, stock and reserved seasoning mixture; bring to boil, stirring occasionally. Reduce heat to medium-low; simmer 5 minutes. Stir in half-and –half. Return chicken to skillet; cook until heated through. Serve with pasta.

    Made this for the first time tonight. It was fantastic! Great flavor, easy to assemble, chicken stayed very juicy. I substituted olive oil for the vegetable oil, I used whole wheat pastry flour instead of white flour. I also added sliced mushrooms and served it over whole grain farfalle.

    This reminded me of some really great Italian food I had in Argentina. It has such a nice flavor! I love the cream with the classic red sauce flavor.

    Great recipe. Very easy to make. Everyone liked it! It is so hard to find recipes with no cheese. Served with rice as well. Exchanged thyme for rosemary.

    loved it. Used vegan sour cream in place of half and half since I shouldn't have dairy. Also added mushrooms cause I just happened to 1. have some and 2. love them. Served with brown rice. Making it again tonight for my son in law with pasta. can't wait.

    I made this one for dinner tonight. And while I thought the chicken had a bland taste after taking it off the pan to put the other ingredients in I was tempted to stop cooking after that. Sure enough after returning the chicken to the pan with the sauce it was to DIE for. I will make it with roasted potatoes the next time.

    I may add more of the McCormick seasonings next time, but otherwise this was delicious. The chicken was cooked perfectly, and I am not a great cooker of chicken!

    I've made this twice -- for the family and for dinner guests. Both times it was very well received! The chicken was tender, the sauce was flavorful. It works well over pasta as written, or with rice. All items on the ingredient list are items we normally have on hand -- that's a help. It's fast and easy to put together. And it's got some good nutrition while being low in fat, calories, and sodium. Minor issue ... we've generally needed to add some salt at the table. Not much, but if you're looking for low-sodium meals, the flavors in this one seem incomplete without adding a touch.
