This Italian restaurant favorite is easily enjoyed at home. Purchase chicken cutlets to make the preparation quicker and easier.
1/2 cup flour
1 package McCormick Gourmet™ Garlic & White Wine Chicken Scaloppine Recipe & Seasoning Mix
1 1/4 pounds thinly sliced boneless skinless chicken breasts
1 tablespoon olive oil
2 tablespoons olive oil
1 cup Kitchen Basics® Original Chicken Stock
1 tablespoon lemon juice
2 tablespoons capers, drained and rinsed
2 tablespoons butter
Mix flour and 1/4 cup of the Seasoning Mix in shallow dish. Coat chicken with flour mixture.
Heat 2 tablespoons of the oil in large nonstick skillet on medium heat. Cook chicken in batches 3 minutes per side or until golden brown. Add additional 1 tablespoon oil as needed. Remove chicken to serving platter; keep warm.
Stir stock, lemon juice, capers and remaining Seasoning Mix into skillet. Bring to boil, stirring to release browned bits in bottom of skillet. Reduce heat to low; simmer 5 minutes. Whisk butter into sauce. Pour sauce over chicken. Serve with cooked rice or pasta, if desired.
