An herb and mustard crust provide flavor to roast beef. Served with a creamy horseradish sauce, it's a perfect entree for a celebratory dinner.
1/2 cup sour cream
2 tablespoons prepared horseradish
1 teaspoon of the McCormick Gourmet™ Herbes de Provence Roasted Chicken & Potatoes Recipe & Seasoning Mix
1 package McCormick Gourmet™ Herbes de Provence Roasted Chicken & Potatoes Recipe & Seasoning Mix
2 tablespoons McCormick Gourmet™ Mustard, Ground
1 boneless beef eye round roast, 3 pounds
2 tablespoons oil
Preheat oven to 350°F. Mix sour cream, horseradish and 1 teaspoon of the Seasoning Mix in small bowl until well blended. Cover. Refrigerate until ready to srve.
Mix remaining Seasoning Mix and mustard. Brush beef roast with oil. Rub with Seasoning mixture. Place on wire rack in foil-lined roasting pan.
Roast 1 to 1 1/4 hours or until desired doneness. Let stand 10 minutes before slicing. Serve roast beef with horseradish cream.
