Just as good the second time around – leftover rice and chicken makes a fabulous fried rice.
Heat 2 tablespoons of the oil in large skillet or wok on medium-high heat. Add rice, vegetables, chicken, soy sauce, apricot preserves and Seasoning Mix; stir fry 5 minutes or until rice and vegetables are heated through. Push rice mixture to side of skillet
Heat remaining 1 tablespoon oil in skillet. Pour egg into middle of skillet. Cook and stir until egg is almost set. Stir into rice
