Just as good the second time around – leftover rice and chicken makes a fabulous fried rice.
3 tablespoons vegetable oil, divided
3 cups cold cooked rice
1 cup frozen peas and carrots
1 cup shredded cooked chicken
1 tablespoon reduced sodium soy sauce
1 tablespoon apricot preserves
1 package McCormick Gourmet™ Sesame & Garlic Stir Fried Chicken Recipe & Seasoning Mix
1 egg, lightly beaten
Heat 2 tablespoons of the oil in large skillet or wok on medium-high heat. Add rice, vegetables, chicken, soy sauce, apricot preserves and Seasoning Mix; stir fry 5 minutes or until rice and vegetables are heated through. Push rice mixture to side of skillet.
Heat remaining 1 tablespoon oil in skillet. Pour egg into middle of skillet. Cook and stir until egg is almost set. Stir into rice.
