Bourbon Spiced Chicken & Potatoes Skillet

One-skillet meals are a weeknight cook's favorite recipes. This chicken dinner fits the bill as it includes potatoes and carrots in a savory sauce with chili pepper, paprika and hint of bourbon flavor.

  • Mix flour and 3 tablespoons of the Seasoning Mix in shallow dish. Reserve 1 tablespoon. Coat chicken evenly with remaining flour mixture.

  • Heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 minutes per side or until golden brown. Remove from skillet. Add potatoes, carrots and onion to skillet; cook and stir 5 minutes.

  • Mix stock, remaining Seasoning Mix and reserved flour mixture until smooth. Stir into skillet. Bring to boil, stirring frequently. Return chicken to skillet. Cover. Cook 20 minutes or until chicken is cooked through and vegetables are tender.

    I love it! I left out the flour and used the spice directly. It turned out wonderful! I already bought more spice to make it again!
