Lemon Bay Leaf Iced Tea

Steep Darjeeling tea leaves, Bay Leaves and lemon peel in the sun for a refreshing tea with light lemony herbal flavor. Use Simple Syrup instead of sugar to sweeten the iced tea to avoid any undissolved grains of sugar.

  • Place water, tea leaves, bay leaves and lemon peel in large container or pitcher. Stir. Cover with lid or plastic wrap. Let stand in sun for 3 to 5 hours.

  • Strain tea, discarding tea leaves, bay leaves and lemon peel. Serve tea over ice or refrigerate until chilled. Sweeten with Simply Syrup, if desired.

Cooking tip

• Use a vegetable peeler or small thin knife to remove lemon peel in 1 long strip.

Simple Syrup: Place 1 cup each sugar and water in small saucepan on medium heat. Bring to boil. Reduce heat to low; simmer 3 minutes, stirring to dissolve sugar. Refrigerate until ready to serve. Sweeten tea with 2 tablespoons Simple Syrup per 1 cup tea. For Southern-style sweet tea, increase Simple Syrup to 1/4 cup.
