This dip gets its terrific smoky flavor from chipotle chile pepper. Add extra chipotle to turn up the heat.
1 can (15 ounces) black beans, drained and rinsed
1/2 cup sour cream
1/4 cup tomato paste
1 teaspoon McCormick Gourmet™ Chile Pepper, Chipotle
1/2 teaspoon McCormick Gourmet™ Cumin, Ground
2 tablespoons chopped onion
2 tablespoons diced tomato
1 teaspoon chopped fresh cilantro
Mash beans in medium bowl until slightly chunky. Add sour cream, tomato paste, chipotle chile pepper and cumin; mix until well blended. Cover.
Refrigerate 30 minutes to allow flavors to blend.
Garnish with onion, tomato and cilantro. Serve as desired with tortilla chips and salsa or guacamole.
