This four-course meatless menu will delight everyone at the table. Each course builds on the last, ending in a crescendo of complex flavors and interesting spice combinations. They’ll never miss the meat!
Inspired by local farmers’ markets filled with a bounty of fresh fruits and veggies, we start with a mixed green, mandarin orange, beet, and citrus salad.
For the main course, we selected a pasta dish to give the menu substance. Instead of using a heavy tomato or cream-based sauce, we used olive oil, garlic, olives, capers, tomatoes and spices to maintain the integrity of the fresh ingredients.
Because the meal is light overall, there’s a little room for indulgence, so we finish the menu with a decadent chocolate almond torte recipe.
