This menu was borne of a desire to eat well while respecting the planet. In creating these recipes, we took cues from local markets to select sustainable produce and meats. Feel free to tweak the ingredients with whatever is on offer at your local farmer’s market!
Pacific halibut has a wonderful, firm, meaty texture. When selecting sustainable seafood, such as Pacific halibut, be sure that it’s farmed using environmentally friendly methods. Our arugula salad uses organic peaches but you can substitute your favorite locally grown fruits for a delicious earth-friendly alternative.
